1 cup milk
1/4 cup Madhava Organic Coconut Sugar
1 package active dry yeast
1 cup whole wheat flour
1 teaspoon salt
4 tablespoons butter, melted and cooled
2 1/2 cups all-purpose flour
Scald milk in a large glass mixing bowl in the microwave by heating to just less than a simmer (cook until milk begins to steam but do not bring to a boil.) Cool to lukewarm (100 to 110 degrees.)
When milk is lukewarm, stir in Madhava Organic Coconut Sugar and yeast. Let stand 5 minutes.
Combine whole wheat flour and salt and stir into yeast mixture. Let stand 10 minutes or until bubbles start to form on top.
Beat in egg and cooled melted butter.
Mix in all-purpose flour, kneading in the last 1/2 to 1 cup of flour. Knead dough until smooth. Form dough into a ball and place back in mixing bowl. Cover with a moist cloth and allow to stand 1 hour or until doubled in bulk. Punch down dough and allow to rise another 30 minutes. Proceed as directed to make Pecan Sticky Buns or Cinnamon Rolls.
