Strawberry Coconut Cream Pie with Gluten-Free Almond Crust

It's finally springtime and more fresh produce is hitting grocery store stands every day, making it the perfect time to try your hand at this delicious, dairy-free dessert recipe! Start with a gluten-free almond crust that's sweetened with dates, pour in a dairy-free coconut cream filling flavored with our Organic Pure & Raw Honey, and arrange bright and juicy strawberries for a springtime treat your taste buds will love.

Ingredients

For the Gluten-Free Almond Crust:

1 cup medjool dates, pitted

1 cup raw almonds

1/4 cup shredded coconut

For the Coconut Cream Filling:

1 14-ounce can coconut cream, refrigerated overnight

2 tablespoons Madhava Natural Sweeteners Organic Pure & Raw Honey

1 teaspoon vanilla

1 pound strawberries

Directions

For the Gluten-Free Almond Crust:
1. Place all ingredients in a food processor and process until fully combined and very sticky. Add more dates if needed – the mixture should be sticky enough to easily squeeze into a ball.
2. Lightly oil an 8-inch springform and carefully press the almond-date mixture into the bottom of the pan. Place in the freezer to set.

For the Coconut Cream Filling:
1. Scoop out the solid white portion of the coconut cream and place it in the bowl of a stand mixer. Add organic honey and vanilla, and whip until stiff peaks form, about 1-2 minutes.
2. Remove crust from the freezer and pour the filling, smoothing the top with a spatula. Return to freezer until set, about 10 minutes.
3. Remove from freezer and top with sliced strawberries. Return to freezer for at least 1 hour. Slice and enjoy!
