For the Spiced Chickpeas (makes enough to top 4-6 slices of avocado toast):
1 can chickpeas, rinsed and drained
2 tablespoons olive oil
1 teaspoon ground cumin
2 teaspoons smoked paprika
1 teaspoon chili powder
Drizzle of Madhava Natural Sweeteners Organic Pure & Raw Honey, to taste
For the Avocado Toast:
2 slices of bread
1 large avocado
Garnish: 1/2 lime, fresh sprouts or microgreens, hot sauce, Madhava Natural Sweeteners Organic Pure & Raw Honey
1. Place a skillet over medium-high heat. Once hot, add olive oil and chickpeas and stir. Mix in spices and honey, and continue cooking and stirring until chickpeas become fragrant and a little crispy, about 10-15 minutes.
2. Toast the bread.
3. Slice avocado and use a fork to mash and spread it on the toast.
4. Garnish: squeeze fresh lime juice over mashed avocado to add flavor. Top with crispy chickpeas, then add sprouts, hot sauce, and a drizzle of organic honey, as desired.
