Pumpkin Pie

1 15-ounce can pumpkin puree (or 1½ cup roasted pumpkin, pureed in food processor)

3 large eggs

½ cup full fat coconut milk

½ cup Madhava Organic Pure & Raw Honey

1 tablespoon ground cinnamon

1 teaspoon ground nutmeg

1/8 teaspoon sea salt

1 Pie Crust, unbaked (we like this Paleo Pie Crust from Elana's Pantry)


1) Preheat oven to 350° F.
2) In a food processor, combine pumpkin puree and eggs
3) Pulse in coconut milk, honey, cinnamon, nutmeg, and salt
4) Pour filling into pie crust
5) Bake at 350° F for 45 minutes
6) Allow to cool then refrigerate for 2 hours to set
