1 cup flour
1 cup corn meal
⅔ cup Madhava Organic Coconut Sugar
½ teaspoon kosher salt
1-1/2 tablespoons baking powder
1 flaxseed "egg" (see directions )
1 cup coconut milk
⅓ cup coconut oil, soft at room temperature
This naturally sweetened corn bread recipe uses only 8 ingredients, 1 mixing bowl, and bakes in 25 minutes!
For the flaxseed “egg”, mix 1 tablespoon ground flaxseed and 2-1/2 tablespoons of water and let sit 5-10 minutes until thickened.
Preheat oven to 350 degrees F. Grease a 9-inch round pan with coconut oil.
Using a large bowl, mix all the dry ingredients (flour, corn meal, Madhava Organic Coconut Sugar, kosher salt, baking powder) together. Add the coconut milk, coconut oil, and flaxseed “egg” mixture and stir until combined.
Spread into greased pan.
Bake for 20-25 minutes. Insert a knife or toothpick into the center to test if it’s done.
Let cool for 5 minutes before serving.
Store leftovers in an airtight container for up to 3 days.
