2 1/2 Tbsp gelatin
1 cup cold water, divided
1 1/2 cup dextrose
1 cup Madhava Organic Cassava
1/4 tsp salt
1/4 tsp peppermint extract
1/4-1/2 cup cocoa powder
Not just homemade marshmallows—although, that’s a treat in and of itself! These are fructose-FREE homemade marshmallows, thanks to our Organic Cassava. Pair them with a steamy cup of homemade cocoa, or enjoy them by themselves! Either way, you’re just a few steps away from the best marshmallows you’ve ever had.
Coat an 8×12 inch pan with coconut oil, then line with parchment paper. Combine gelatin and 1/2 cup cold water in the bowl of electric mixer and let sit for at least 10 minutes. In a small pan, add the dextrose, cassava, salt, and rest of the water and heat on medium. When dextrose has dissolved, turn heat on high until temperature reaches 240˚ on a candy thermometer. Remove from heat.
Turn the mixer on low and slowly pour the cassava mixture into the gelatin. Mix on high for about 10 minutes. You want the mixture to triple in size, but make sure it doesn’t get too stiff. If it looks like the mixture is sticking the sides that means it’s over mixed (but you can still use it! It will just be more difficult to get into the pan).
Pour into the prepared pan and let sit for at least 8 hours uncovered. Cut into cubes and dust all sides with dextrose to keep from sticking.
