2 cups sugar, or Madhava Organic Coconut Sugar for a richer flavor
1/4 cup water
1 teaspoon lavender, crushed, or 1/2 teaspoon of your favorite liquid flavor (vanilla, cinnamon, almond, mint, etc.)
1. Combine all ingredients in a saucepan set over medium heat and attach a candy thermometer to the inside.
2. Continue stirring until sugar has completely dissolved, and increase heat to medium-high. Bring mixture to a boil, and allow to cook without stirring until the mixture reaches 300°F.
3. While candy is cooking, place a large sheet of parchment paper on the counter. Once candy reaches 300°F, carefully pour the mixture onto the parchment creating 2-inch circles. Place the cake-pop stick and allow to cool completely until fully hardened before peeling the lollipops off the parchment. Wrap each lollipop in a small sheet of parchment or plastic wrap to prevent them from sticking together.
