Grilled Peach Salad with Honey Dressing

Peaches are deliciously in season and in this summer salad, they add a wonderful burst of flavor! We snuck in some complete protein with organic quinoa and topped this dish with pepitas for a satisfying crunch. With a simple honey dressing made with Ambrosia Honey and just a handful of other fresh ingredients, this salad can be ready to enjoy in no time at all. Try doubling the honey dressing recipe to use as a marinade, or store in the fridge for your next salad!


For the salad:

3 or 4 peaches

2 tablespoons olive oil

4 cups arugula

1 cup cooked quinoa

1/2 cup blueberries

1/2 red onion, thinly sliced

1/4 cup pepitas

For the dressing:

2 tablespoons Ambrosia Honey

1 teaspoon fresh rosemary, minced

2 cloves garlic, minced

1/3 cup olive oil

salt and pepper to taste


1. Preheat the grill to medium heat. Slice peaches in half and brush with olive oil. Place cut-side-down and cook until grill marks form. Flip to grill the other side, cooking for about 8 minutes in total.
2. Prepare the dressing by whisking together all ingredients.
3. Toss together arugula, quinoa, blueberries, red onion and pepitas. Drizzle with dressing and toss again.
4. Top salad with grilled peaches and enjoy!
