For the salad:
3 or 4 peaches
2 tablespoons olive oil
4 cups arugula
1 cup cooked quinoa
1/2 cup blueberries
1/2 red onion, thinly sliced
1/4 cup pepitas
For the dressing:
2 tablespoons Madhava Natural Sweeteners Ambrosia Honey
1 teaspoon fresh rosemary, minced
2 cloves garlic, minced
1/3 cup olive oil
salt and pepper to taste
1. Preheat the grill to medium heat. Slice peaches in half and brush with olive oil. Place cut-side-down and cook until grill marks form. Flip to grill the other side, cooking for about 8 minutes in total.
2. Prepare the dressing by whisking together all ingredients.
3. Toss together arugula, quinoa, blueberries, red onion and pepitas. Drizzle with dressing and toss again.
4. Top salad with grilled peaches and enjoy!
