Ginger Baked Salmon

Ingredients

4 salmon fillets (approximately 6 oz each)

1/3 cup Madhava Organic Cassava

1/4 cup low-sodium soy sauce

1 Tbsp rice vinegar

1 Tbsp fresh ginger, minced

3 cloves garlic, minced

dash red pepper flakes

1/4 cup sliced green onions

Directions

This flavorful, tender salmon gets a little sweetness from our Organic Cassava—an all-natural, vegan and fructose-free sweetener you’re going to love.

Directions
Place salmon fillets in a baking dish. In a small bowl, combine cassava, soy sauce, rice vinegar, ginger, garlic, and red pepper flakes with a whisk or fork. Pour half of liquid mixture over salmon to coat, keeping the remainder in reserve. Cover and refrigerate 1 hour.

Preheat oven to 400° F. Place salmon on a foil-lined pan or baking sheet. Bake 15- 20 minutes or to desired degree of doneness.

While salmon is baking, place reserved marinade into a small saucepan or skillet. Bring to a boil, then reduce heat to low-medium and let simmer, stirring occasionally, until thickened, approximately 7 minutes. Serve over salmon.
