For the Homemade Chai Spice Blend:
3 teaspoons ground ginger
2 teaspoons ground cinnamon
1 teaspoon ground cardamom
1 teaspoon ground allspice
1 teaspoon ground cloves
For the Protein Bites:
3/4 cup gluten-free steel-cut oats (use quick-cook for a softer consistency)
1/2 cup almond meal
1 tablespoon homemade chai spice blend
1/4 cup vanilla protein powder
1/4 cup creamy almond butter, or any nut butter
Extra chai spice blend for rolling
1. Place the steel-cut oats in a blender or food processor and blend until fine.
2. Add remaining ingredients and blend until fully incorporated. If dough is dry and crumbly, add more agave or nut butter.
3. Roll dough into 1.5-inch balls (about the size of a golf ball), roll in extra chai spice and arrange on a cookie tray lined with parchment paper.
4. Freeze for at least 30 minutes, then store in an airtight container in freezer or refrigerator.
