Cassava Kale Slaw


4 cups (3oz) chopped kale

2 cups (4 oz) shredded red cabbage

1 cup (3 oz) shredded carrot

1/4 cup chopped peanuts

For dressing

3 Tbsp canola oil

1/4 cup rice vinegar

1/4 cup Madhava Organic Cassava

1/2 tsp salt

1/4 cup peanuts


Say goodbye to salad dressings that are too sweet and muddled with artificial sugars. This superfood salad is tossed with a yummy dressing that comes together in a flash and is vegan, gluten-free and fructose-free—thanks to our Organic Cassava.

Combine all salad ingredients except chopped peanuts in a large salad bowl.

For dressing, combine all ingredients in a blender. Blend on high until thickened—some peanut chunks may remain.

Pour dressing over salad ingredients and mix well. Top with chopped peanuts and dig in!
