Cassava Caramel Popcorn


1/2 cup butter

1 cup Madhava Organic Cassava

1/2 tsp salt

1/2 tsp baking soda

1 tsp vanilla

12 cups freshly popped popcorn*


Take the fair fare home with this crunchy caramel treat, made with our all-natural, vegan, fructose-free Organic Cassava sweetener. 

Combine butter and cassava in a medium saucepan. Bring to a boil over medium to medium-high heat while stirring frequently. Continue to boil 5 minutes without stirring. Boil another 5 minutes, stirring once or twice per minute. Stir in salt, baking soda, and vanilla—mixture will foam up. Stir well and remove from heat.

Pour over popcorn in a large mixing bowl and combine until popcorn is coated. Spread popcorn in a single layer on two parchment paper-lined baking sheets. Bake at 250 degrees for 45 minutes, stirring about every 10 minutes. Remove from oven and cool completely.

*To make popcorn, cook 1/2 cup popcorn kernels in 2 to 3 tablespoons vegetable oil in a popcorn maker per machine instructions. Popcorn can be prepared while mixture boils.

Note: Making caramel is tricky, so results may vary depending on its consistency. Thick or thin, however, you can be assured it’s still going to be yummy.
