Blueberry Turmeric Muffins


1/3 cup cashew milk

1/4 cup olive oil

1 banana, mashed

1/2 cup Madhava Organic Cassava

1 1/2 Tbsp chia seeds

1/2 cup walnuts

1/2 cup oats

1/3 cup buckwheat flour

1 Tbsp arrowroot powder

3/4 tsp baking powder

1/4 tsp baking soda

1/2 Tbsp turmeric

1/2 tsp ground cardamom

1/4 tsp sea salt

3/4 cup fresh blueberries

For topping

1/3 cup oats

2 Tbsp olive oil

1 Tbsp Madhava Organic Cassava

1 tsp cinnamon


Turmeric has been hailed for thousands of years as a powerful healing spice for its anti-inflammatory properties, but is better known as the ingredient that gives curry its yellow color. In small bowl, add 4 tablespoons water to the chia seeds and let sit 10 minutes. In large mixing bowl, combine cashew milk, olive oil, mashed banana and cassava. In another bowl, add remaining ingredients (except topping ingredients) and mix to combine.

Add soaked chia seeds to wet mixture, followed by dry mixture and slowly mix until combined. Fold in blueberries.

Pour into 12-cup muffin pan, filling each cup until 2/3 full. Combine topping ingredients then sprinkle over muffin batter. Bake at 385 degrees for 10-15 minutes, or until toothpick inserted in centermost muffin comes out clean.

Serve warm and enjoy with a mug of hot tea.
